Fast soup

This soup is so fast it’s crazy, simple too. This recipe we’re using broccoli, but you could substitute cauliflower or another tasty veggie in its place.


  • 2 good size broccoli heads, cut.
  • 2 c vegetable stock
  • 1 onion
  • 2 cloves garlic

Steam the broccoli until it just starts to turn soft. Meanwhile fry the onion and garlic in a pan. Add all the ingredients to the blender, or use a hand held whizzer thing. And blend until smooth- you can add a little more water if it’s too thick. Add salt and pepper to taste and serve with some crusty bread.

This does sound almost too simple but the taste of one lone vegetable is really quite delightful when it can it can be appreciated on it’s own, well with a little help from garlic and friends. It is very very healthy and you’ll be surprised how much you enjoy it as a meal. Broccoli is so good for you, high in vitamin C and A, folic acid, calcium and fibre, it is thought to reduce high blood pressure and may work to prevent colon cancer. Plus plus plus hey?
