Cinnamon coffee muffins

These muffins are good then you want a quick little breakfast with coffee in the morning or an afternoon snack to pick you up. This particular recipe is pretty smooth, usually most of our muffin recipes have all sorts of goodies added, especially fruits or nuts, but sometimes you just want a plainer treat right?


  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup caster sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 2 tbsp vegetable oil
  • 1 tsp vanilla extract
  • 3/4 cup buttermilk or soy milk (for dairy free)
  • 1 tbsp liquid coffee
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon

Preheat oven to 200ºC (400ºF). Grease or line a muffin tray.

In a bowl, whisk together flour, baking powder, baking soda, salt and cinnamon. In another bowl, whisk together sugars and the egg until smooth. Beat in vegetable oil, coffee and vanilla. Working in 2 or 3 additions, alternate adding the flour and the buttermilk to the sugar mixture, stiring until just combined. In a small bowl, stir together remaining brown sugar and cinnamon.

Fill each muffin cup about 1/2 full. Sprinkle with a scant 1/2 tsp of the brown sugar mixture into each cup. Then evenly divide remaining batter on top and sprinkle with remaining sugar mixture if you wish. Bake for 15-18 minutes, until a tester comes out clean.

Makes about 10 muffins. You can add 1/2 c of any fruit, nuts or chocolate chips to these and leave out the coffee if you like!  Recipe eatpress’ own.

    Those muffins look like they would be good. I sometimes experiment with adding different things to muffins and had not thought of coffee. Thanks for the idea.
