Spaghetti bolognese

Here at eatpress, we like to share some really basic recipes, for people who may not know a classic recipe or aren’t sure how to throw together a sauce or cake easily. This bolognese recipe is really easy to make and incredibly tasty. Our Italian friend Mr Plos gave this recipe his stamp of approval too, so even though there are many bolognese sauce variations, this particular one is pretty timeless.

  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, crushed
  • 200 g mushrooms, chopped
  • 500 g minced beef
  • 1 x 400 g tin tomatoes (or thereabouts)
  • 2 tsp tomato paste
  • 1/4 cup red wine
  • 1/2 c beef stock
  • 1 tsp thyme
  • 1 tsp oregano
  • 1/2 tsp paprika
  • 1/2 tsp sugar
  • 1/2 tsp black pepper
  • 500 g spaghetti
  • parmesan cheese
  • salt pinches

(Serves 4)

Heat oil in a large sauce pan. Saute onions and garlic until soft. Add beef and brown over high heat, stirring constantly to break lumps. Add tomatoes and their juices, tomato paste, herbs, seasonings and stock. Bring to boil, then turn the heat down and simmer for about 15 – 20 minutes until lots of the liquid has evaporated and the sauce is thick.
Boil and drain the spaghetti, toss with a little butter and pile into a serving bowl. Spoon bolognese over top and sprinkle generously with shaved or grated cheese and serve with salad, maybe garlic bread and red wine!
