It’s Sunday again already! Todays recipe is for lovely crisp little cookies that are perfect with a Sunday afternoon cuppa on the balcony!
- 1 1/2 c plain flour
- 1 1/2 tsp ground ginger
- 3/4 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp salt
- 1/3 c (95 185 g) butter, softened
- 1 c sugar
- 1 egg
- 1/4 c dark molasses
- 1 tsp cider vinegar
Preheat the oven to 180ºC (350ºF) and lightly grease 2 baking sheets
Combine the flour, ground ginger, baking soda, ground cinnamon, ground cloves and salt in a large bowl and mix well.
In another bowl beat the butter and sugar until light and fluffy Lightly beat eggs and add to butter mixture. Add molasses and vinegar and beat well. Gradually add flour mixture to butter mixture. Mix until a stiff dough forms. Shape the dough into 1 inch balls and place about 1 1/2 inches apart on prepared baking sheets.
Bake until the edges are slightly brown, about 10 min for chewy and 13 min for crisp. Cool on the baking sheets until slightly firm.
