Quick easy chocolate cake

It was a double birthday this week and a cake needed to be made fast. With not too many ingredients in the pantry, this cake was the perfect choice for a speedy, but deliciously moist celebratory cake. Within an hour it can be mixed and baked, try this one if you need fast chocolate!

  • 1 1/3 c plain flour
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/3 cup cocoa powder
  • 1 cup caster sugar
  • 1/2 c milk
  • 2 eggs
  • 125g butter, softened
  • 1 tsp vanilla essence

Chocolate icing

  • 1 1/3 cups pure icing sugar
  • 1 1/2 tbsp cocoa powder
  • 40g butter melted
  • milk as needed

Preheat the oven to 180°C (350ºF). Grease a 20cm (8 in) round cake pan.

Beat the butter and sugar until pale in colour, add the eggs one at a time and add vanilla. In another bowl sift flour, bicarb soda, baking powder and cocoa powder. Add the dry ingredients and the milk to the wet ingredients and mix until smooth- not for too long though.

Pour mixture into prepared pan- at this point we poured half the cake batter in, then a layer of chocolate chips and then the rest of the batter on top, just for a little added chocolate crunch.

Bake for 40 to 45 minutes or until a skewer inserted in the centre comes out clean. Allow to cool in pan for 5 minutes. Turn out onto a wire rack to cool completely.

To make icing/frosting sift icing sugar and cocoa powder into a bowl. Add butter and about 1 tablespoon of milk and stir until smooth- add more milk if need be. Spread icing over the cooled cake. Top with fresh raspberries or blueberries and some shaved chocolate flakes, if you like. Then slice and serve.
