Thai green chicken curry

Thailand, ahh, we could go round the world just eating and die happy. Thai food can be quite complex and time consuming, but there are also dishes that can be made in an instant, well, less than 1/2 an hour is good. Try this one next time you’re in a bit of a rush- it’s delicious.

  • 1 onion, finely chopped
  • 1 Tbsp oil
  • 2 Tbsp Thai green curry paste
  • 1 c coconut milk
  • 1/2 c water
  • 500 g (1 pound) chicken thigh or breast fillets, cut into bite-sized pieces
  • 100 g (3 1/2 oz) green beans or zucchini cut into pieces
  • 2 kaffir lime leaves
  • 1 Tbsp fish sauce
  • 1 Tbsp lime juice
  • 2 tsp brown sugar
  • 1/2 – 1 cup fresh coriander leaves, roughly chopped


Heat oil in a wok or large saucepan. Cook the onion and curry paste for about 1-2 minutes, stirring constantly. Add coconut milk and water, and bring to the boil. Then add chicken pieces and lime leaves; stir to combine. If chicken is not covered by liquid, add more coconut milk.

Simmer, uncovered, for 15-20 minutes or until chicken is tender, adding the beans after about 10 minutes. Add fish sauce, lime juice and brown sugar; stir to combine.

Serve with steamed rice and more coriander.
