These cookies are lovely, the recipe is from the great Mollie Katzen and she makes them as sesame stars. So cut them out in any shape you like and enjoy.
- 1 c butter, softened
- 1 c sesame butter or tahihi
- 1 c (packed) brown sugar
- 1/4 c granulated sugar
- 2 eggs
- 2 tsp vanilla extract
- 4 c unbleached white flour
- 1 tsp baking powder
- 1/2 tsp salt
sesame seeds and granulated sugar for the tops
Preheat the oven to 190ºC (375ºF). Lightly sprinkle a baking tray with sesame seeds.
Cream together the butter, sesame butter or tahini and sugars in a bowl. Add the eggs one at a time and then the vanilla.
Sift the flour baking powder and salt directly into the butter mixture and stir until thoroughly combined. Turn out the dough onto a lightly floured surface and roll out pretty thin, about 1/2 cm (1/8in). Cut into 6cm (2 1/2in) shapes with a knife or cookie cutter and place on the prepared tray. Sprinkle the tops with sesame seeds and and sugar and bake for 12 – 15 minuted or until lightly browned. Cool on a rack for about 10 minutes before serving- if you can wait.
Please note: This makes a whole lot of cookies, so you can either use half the dough and freeze the rest, or just half the recipe, makes about 40.
Truth be told, I wouldn’t call myself a sesame seed fan. Especially when it comes to baked goods. But then I remember that my favorite bagels, from good bagel places, are sesame seed bagels. And they’re loaded with seeds! So, I think these would probably hit my palate in just the same, very satisfying way. Plus they look beautiful. Thanks for the recipe!
