Avocado and pink grapefruit salad with grapefruit vinegarette

Salads are so easy to toss together quickly, healthy and tasty. This is a new one for us, and it’s wonderful, really zesty and fresh. Perfect for an (almost) summer day.

3 pink grapefruits
1 tsp grated fresh ginger or minced sushi ginger
1 Tbsp walnut oil
1 – 2 Tbsp extra virgin olive oil
1 Tbsp fresh lemon juice
2 Tbsp red wine vinegar
2 tsp maple syrup or sugar
salt and pepper to taste
1/2 k (1 pound) mixed salad greens (watercress, baby spinach and other soft lettuces), well cleaned
1 ripe avocado

Grate enough zest from one of the grapefruits to make 1/2 teaspoon. Put the grapefruit and the zest aside. Squeeze the juice from the other two grapefruits and strain, you will need 1/2 cup for the vinegarette. Combine the grapefruit juice, ginger, walnut oil, olive oil, salt, lemon juice, zest, vinegar, and sweetening, and mix well- you can do this in a little jar with a lid and shake. Arrange the salad greens on individual serving plates. Peel and pit the avocado, and cut it into slender slices. Place few of these on each plate. Add a few grapefruit sections and drizzle on some vinaigrette. This salad is great with fish or chicken.
