Real mint and chocolate chip cookies

Growing up on a farm meant growing lots of things, not just us, but tons of trees and plants. Now that all I have is a little balcony, herbs are all the greenery that can fit, but even so- it is the greatest to use what you grow yourself in your cooking, so satisfying. Mint and chocolate have been friends for a long time and rightly so. This is a recipe that we have been baking for years, it uses real mint- not the extract, which is why it’s good. Of course if you can’t get fresh mint, you can use extract, but it’s not the same.

Mint chocolate chip cookies

  • 1/2 c butter, room temperature
  • 1/2 c firmly packed brown sugar
  • 1/3 c caster sugar
  • 1 egg
  • 1 tsp pure vanilla extract
  • 1 1/2 c all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 c milk chocolate chips (or any kind you prefer)
  • 1/4 c coarsely chopped fresh mint leaves (chocolate mint is good, or spearmint, peppermint)

Preheat the oven to 180ºC (375ºF). Line a baking sheet with parchment paper.

Cream the butter and sugars. Add egg and vanilla slowly. Sift together flour, salt and baking soda and then add to the egg mix and beat until just combined. Pop in the chocolate chips and chopped mint and mix together with a spoon of some sort.

Form the dough into 5cm (2 inch) balls. Why not try an ice cream scooper if you have one handy? Place on prepared baking sheet and bake until golden, about 9 minutes for chewy and 12 for crunchy. Let cool on a rack and store in an airtight container. This recipe makes 12 to 15 cookies (depending on the amount of dough consumed prior to baking!)

  3. Yum, fresh mint in cookies sounds great. I have my own little balcony herb garden with mint and have been craving choco chip cookies….guess I know what I have to try!
