Sunday sweets – oatmeal cookies

NYCase is here for a visit!! So good to be near a sister again and to celebrate we’re making a healthy treat in honour of our Mum. Not that this much sugar is healthy, but oatmeal cookies always seem wholesome to us. So comforting and tasty with tea and a chat.


  • 115 g (1/2 c) butter, softened
  • 1/2 c white sugar
  • 1/3 c packed brown sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1 c all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1 1/2 c quick cooking oats

Preheat the oven to 190ºC (375ºF). Grease cookie sheets.

In a medium bowl, cream together butter and sugars. Beat in egg, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon in another bowl and then add to the creamed mixture. Mix in oats. Cover, and chill dough for about one hour.

Roll the dough into walnut sized balls, and place 2 inches apart on your cookie sheets. Flatten each cookie with a large fork. Bake for 8 to 10 minutes- we like them a little soft. If you don’t like them soft, bake for another 5 minutes for a little crunch. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. Also feel free to throw in a couple of raisins, sultanas, nuts, chocolate chips or dessicated coconut etc.
