Sunday sweets – Lemon Delicious Pudding

Yesterday was lovely Shizuko’s birthday and to celebrate we’re cooking her favorite dessert for the Sunday sweet. Lemon Delicious Pudding. Shiz is known to critique a great dessert with “It’s not quite perfect” so that the chef would have to make it again and she could eat it once more (genius). This recipe is from Stephanie Alexander and it is – as it should be – totally delicious…

  • 2 lemons
  • 60g (4 tbsp) butter
  • 1 1/2 c sugar
  • 3 eggs, separated
  • 3 tbsp self-raising flour (or 3 tbsp flour and a pinch of baking powder)
  • 1 1/2 cups milk

Preheat the oven to 180ºC (350ºF) and butter a 1L (1 Quart) ovenproof dish, or butter 4 ramekins.

Zest 1 lemon and juice both. Cream the butter with zest and sugar, then add the egg yolks.

Add flour and milk alternately to make a smooth batter. Then mix in lemon juice.

Whisk egg whites until creamy and firm and then fold gently into batter. Pour batter into prepared basin. Stand basin in a baking dish and pour in hot water to come halfway up sides of basin. Bake for 1 hour. Allow to cool a little before serving with a dusting of icing sugar. (You can add 2 tbsp of passion-fruit pulp of you so desire, this is a real treat also.)
