Snow on the mountain

These cookies are superb. Pea’s Mum is on her way over from the other side of the world for a visit and this is one of her best recipes. A classic that’s baked on most occasions from Christmas’ to birthdays to friends over for afternoon tea. Everyone loves them and they’re great to bake quick, easy and pretty.

Snow on the mountain biscuits

  • 1 c caster sugar
  • 1 1/4 c plain flour
  • 2 lg eggs
  • 65 g (2.2oz) melted butter
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 c chopped pecans
  • 1/2 tsp salt
  • 2 1/2 tbs cocoa powder
  • 1/2 c icing sugar (for rolling)

Preheat oven to 180ºC (350ºF).

In a bowl combine sugar, eggs, vanilla, beat well, then add butter and mix again. In another bowl sift flour, cocoa, baking powder and salt. Then add the dry to the wet mixture and stir in the pecans. Chill, covered for about 2 hours.

Shape the dough into 1 in. balls, roll in the icing sugar and place 2 in. apart on ungreased baking sheets. Bake for 10 minutes – these cookies should be chewy. This recipe makes around 35 biscuits.
