Sunday sweets – Banana cake

This recipe is originally called the Food processor banana cake it’s a recipe torn out long ago from who knows what magazine?!  In any case, it’s a fast mix-it-all-together kind of cake, perfect for baking in a pinch.

  • 1 c caster sugar (sometimes I add a little less)
  • 1/4 c brown sugar
  • 1 c mashed banana
  • 125 g melted butter
  • 3 eggs
  • 3/4 c sour cream
  • 1 3/4 c self raising flour (plain flour with 2 tsp baking powder)

Preheat the oven to 180ºC (350ºF) and grease a fluted ring tin (if you have one- otherwise any ring tin, or round one) 25 cm (10 in).

Put all the ingredients except the flour into a food processor or mix until smooth.  Add the flour and process until combined.  Pour into tin and bake for 40 minutes.

Too easy right?  Banana cake also tastes lovely with some pecans or walnuts thrown in.
