Cherry cupcakes with white chocolate icing

Originally we tasted these cupcakes made by the lovely Mere. She may have used a pre-mix for her cup-cakes so we made up our own version and WOW did they turn out great! White chocolate is often paired with raspberries, but with cherries it’s also amazing. There are a few options for your cherry use too, depending on what’s available to you.


Makes about 12

  • 180g (6oz) unsalted butter, softened
  • 3/4 c (180g) light brown sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 2/3 c (180g) self-raising flour ( 1 2/3 c flour + 1 tsp baking powder)
  • 2 tbsp milk
  • 50g (1.5 oz) fresh cherries (or use dried cherries or maraschino for a sweeter taste) pitted and halved

White chocolate icing

  • 100g (3.5 oz) white chocolate, chopped
  • 200g (7 oz) light cream cheese, at room temperature
  • 50g (1.75 oz) unsalted butter, softened
  • 1/2 tsp vanilla extract
  • 2 c (250 g) icing sugar, sifted

Preheat the oven to 180°C (350ºF). Line a 12-hole muffin tin with paper cases, or grease them. Beat the butter and sugar together until light and fluffy. Then add the eggs one at a time. Stir in the vanilla, cinnamon, flour and milk with a pinch of salt, then the chocolate and cherries.

Spoon into the paper cases (I like to fill them almost to the top so that they puff over, but 3/4 full is good too) and bake for 18-20 minutes, until pale golden and springy. Cool on a wire rack.

For the icing, melt the chocolate in a bowl atop a saucepan of simmering water, then cool slightly. In a bowl, beat the cream cheese, then beat in the butter, vanilla and sugar. Beat in the chocolate until smooth. Chill for a little while (10-20 min) then spread thickly over the cooled cakes.

If you use fresh cherries these will be very pink cupcakes, with dried cherries they will be more golden, and with maraschino they will be a little pink and a little sweeter. Happy cupcakes!
