Sunday sweets – Crepes

Sundays are just the best day- we love a good treat for breakfast every Sunday and Peas’ favorite are crepes. Real French crepes are pretty simple in theory, but to make them successfully can be a bit of a challenge. Mixing the ingredients is incredibly easy, it’s the pouring of the batter and getting the exact right temperature of the pan that can make you crazy (and Beans has gone this way on a number occasions).

However the delicious thin delights are well worth the effort, and the whole thing can be a breeze if you take a couple precautions. Here’s how!

This only makes about 8 crepes and sometimes (with the beginning failures) it’s not quite enough. So double it if you feel you might like more.

  • 1 c milk
  • 3 eggs
  • big pinch of salt
  • 1/2 c flour

Blend together the milk, salt (this is key) and eggs and then slowly add the flour – we do it through a funnel – while the blender is on.

Some recipes say to leave the batter in the fridge for about 20 minutes, but if you’re like us and you want your crepes NOW, then just strain the mixture through a seive (to get rid of bubbles) into a tall cup or container that will be good for pouring.

Make sure the stove is on a low/medium setting – for a gas cooktop that’s about mark 3/4. Electric can be a little more tricky, just make sure it’s had a little while to heat up- slowly.

If you have a heavy based or non-stick pan that’s good, but we just have a normal frying pan. So butter is important in the beginning. It should sizzle but not burn, then pour the batter into the pan and swirl around so that the whole surface is thinly covered (as thin as possible is best). Then cook for a minute or two (the edges will begin to peel away from the pan)- flip and cook for another little bit (you’ll see when it’s ready).

Don’t be tempted to add more flour or pour thicker crepes this will make them rubbery and you won’t get the fine delicate taste that is a perfect crepe! We just serve with real maple syrup and that’s it, but use whatever you like (jam, cream, fruit, ground nuts, lemon, sugar etc) Bon apetit!

    These crepes do look perfect!!! I haven’t ever attempted to make my own as I hear the horror stories of challenges in doing so.
