Sunday sweets – Brownies

We like to make treats on Sunday to make the approaching week seems more appealing, certainly sweetens Monday morning a little. This recipe is another fast and easy one, for moist, satisfying brownies. Even if you don’t like chocolate (I know, odd) who can say no to one?

Brownies

  • 115 g (1/2 c) butter, room temperature
  • 200 g (1 1/3 c) dark chocolate, chopped
  • 2 eggs
  • 230 g (1 c) caster sugar
  • 1 tsp vanilla essence
  • 60 g (1/2 c) plain flour
  • 2 tbsp unsweetened cocoa powder
  • 100 g (1 c) walnuts, roughly chopped

Preheat oven to 180ºC (350ºF). Grease and line a 20cm (8in) square tin.

Melt the butter and about half of the chocolate in a bowl set over gently simmering water; remove from heat and leave to cool a little.

Whisk the eggs in a bowl. Gradually add the sugar, beat continuously until the mixture is thick and foamy and leaves a ribbon-like trail when the beater is lifted. Add the vanilla essence and the chocolate mixture and blend in thoroughly. Sift flour and cocoa powder over the mixture and scatter in walnuts and the rest of the chocolate. Fold the mixture together with a spoon.

Pour batter into the tin and bake for about 30 minutes or until the top is a rich brown. Cool brownies briefly in the tin then cut into squares. Cool brownies completely on a wire rack. Store in an airtight container.
