Sunday sweets – Berry meringue smash

A fast fast non-cooked dessert is a necessity sometimes. This ‘smash’ is basically an Eton Mess (which is usually just strawberries). It’s a lot like a pavlova that someone dropped on the floor and then scooped up and served in glasses. All looks the same in the stomach anyway… Delicious.

Serves 4

  • 2 c fresh or frozen berries (any kind)
  • 150ml thickened cream
  • 100g pavlova nests
  • 100g white chocolate, roughly chopped

Place berries on a large plate lined with paper towel. Stand at room temperature for 5 minutes to partially thaw.

Beat the cream into soft peaks. Using your fingers, gently break up the pavlova nests. Add this meringue and white chocolate to the whipped cream and gently stir to combine.

Gently mash the fruit with a fork. Add to cream mixture, stirring until just combined and then spoon into four tall glasses. Cover and refrigerate until ready to serve.


You can use yoghurt, passionfruit, mango, etc. This is a real mash-up of a dessert, not very pretty, but the tastes and textures work superbly!
