Sunday sweets – Coconut cardamom Burfi

Posted on: November 1st, 2009 by admin 4 Comments

Burfi is an Indian sweet that is really easy to make and really tasty. Also known as Barfi- we prefer Burfi, as something seems to get lost in translation otherwise… It’s made nice and quick with only 4 ingredients and all you need is a stove top, a pan and a fridge.

  • 3 1/3 c (250 g) desiccated coconut
  • 395 ml (13 oz) can sweetened condensed milk
  • 1 1/2 tsp ground cardamom OR 10 cardamom pods – crushed to powder
  • Handful of pistachio nuts, roughly crushed

Mix 3 cups of the coconut and the rest of the ingredients in a bowl.

Heat a pan (non stick if you have it) on low heat and add the mixture to the pan. Stir over low heat until the mixture starts to dry and rolls easily into a ball. Remove from the heat. Leave it until it is cool enough to handle.

Place the remaining coconut onto a plate. Using damp hands, roll the mixture into balls and then roll in coconut to coat and place them on a plate. Refrigerate for a minimum of 30 minutes and serve with fruit. These coconut balls can be refrigerated for up to a week.

Original recipe from Raini Singh on SBS.
