Little coffee cookies

The flu has been here at out house, so unfortunately Sunday sweets was more like Sunday soup this week, all we seemed to be eating was vegetables and broth. To make up for it, here’s a lovely sweet recipe that you make nice and fast and enjoy for days.

Makes about 2 dozen.

  • 1/2 c caster sugar
  • 1/3 c packed brown sugar
  • 1/3 c butter
  • 1 egg
  • 1 Tbs milk
  • 1 1/2 tsp vanilla
  • 1 1/2 c all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 2 Tbs strong liquid coffee (you can make instant or regular)

Preheat the oven to 200ºC (400ºF) and grease a baking tray.

In a bowl cream together both sugars and the butter, add the egg, milk and vanilla. Stir in the remaining ingredients. Form the dough into about 1 inch balls and place about 2 inches apart on the baking tray. Press each on lightly with a fork and pop into the oven. Bake for about 7-9 minutes.

This is a lovely recipe if you use your favorite kind of coffee, then at breakfast or afternoon tea your drink and treat match! Enjoy.
