Chocolate Christmas cookies

We are still baking cookies for the festive season. These are beautiful- smooth, easy to decorate chocolate cookies. Pop a bunch of these in a box and someone will be overjoyed.

  • 1 1/2 c plain flour
  • 3/4 c cocoa powder
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 150g (2/3 c) softened butter
  • 3/4 c caster sugar
  • 1 egg
  • icing sugar for dusting (optional)

Preheat the oven to 190ºC (375ºF).

In a large bowl, combine the flour, cocoa, baking powder and salt. In another bowl cream the sugar and butter until smooth and add egg, blend until combined. Gradually add the dry ingredients to the wet to form a soft pliable dough. Flatten the dough into a fat disc and wrap in plastic. Refrigerate for 1 hour.

Roll the dough out on a floured surface (about 6mm or 1/4 in) and cut into shapes with cookie cutters. If the dough is sticking, add more flour to the work surface to prevent this. Place your shapes onto a lined baking tray. Bake 10-12 minutes. Cool and add icing and sprinkles or simply dust with icing sugar.
