Sunday sweets – chunky chocolate chip cookies

These are not your average chocolate chip cookies.  We have been on a mission here lately, looking for the perfect THICK AND CRUNCHY chocolate chip cookies.  You see, while I enjoy any form of said cookie, Beans only enjoys a fat crunch when he bites into one.  It was harder to find than you might think, merely adding more flour or less liquid was not the answer.  We had to test and tweak a lot of recipes including many a google search for ‘badass chocolate chip cookies’ and finally here it is! Perfection…

  • 1 3/4 c plain flour
  • 1/2 tsp baking powder
  • 2/3 c caster sugar (we use 1/3 caster 1/3 brown)
  • 1 c chocolate chips (any kind you like)
  • 1/2 c pecans, chopped
  • 100g butter, melted
  • 1 egg, lightly beaten

Preheat the oven to 180°C (350ºF). Line 2 baking trays with baking paper or a silpat.

Mix the plain flour and baking powder in a medium bowl, add the sugar and mix again.  Now throw in the chocolate chips and pecans and stir.

Place melted butter and egg in a small bowl and mix thoroughly. Pour into the flour mixture and stir until combined.

Roll generous tablespoonsful of biscuit mixture into balls and place 4cm (1.5 in) apart on the lined trays. Bake, swapping the trays halfway through cooking, for 20 – 25 minutes or until the biscuits spread slightly and are light golden.

Remove from oven and set aside to cool completely on the trays.  They will be at the prime crunch when they are completely cooled, but we tend to eat a bunch when they are still warm and slightly squishy with sesame ice-cream, because we can’t wait.

    AT LAST – a crunchy AND thick cookie recipe! I must try it! To find one of these recipes and for it to work, is like gold dust…. I’ll let you know how I get on :) .

    These are easy to make, but this appears to make half the number of cookies I am use to from a batch of chocolate chip cookies. The dough is very dry and crumbly. Stiring in the last step was not working as the dough was too dry. I ended up kneeding it instead.

    Tasting the dough, it reminded me of sugar cookie dough with some chocolate chips added. I will write again once they finish cooking and cooling.

    Hi Mike, it’s true the cookie dough is pretty crumbly. This is necessary to make them the perfect chunky/crunchy chocolate chip cookie. It’s a little less butter and more flour than regular chocolate chip cookies, but there are many many different recipes – we love this version and hope it works out for you!
