Roasted Tomato Sauce

This sauce is great for pasta, pizza, meat, roasted veggies, toast. The roast tomatoes taste especially good and this is really easy to make, but impressively tasty.

Roasted tomato sauce

  • 2kg fresh tomatoes, halved
  • 60ml (1/4 cup) olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 tbsp shredded basil
  • Few sprigs thyme
  • Salt
  • Black pepper (freshly ground)

Preheat oven to 220ºC (428ºF)

Place tomatoes cut-side up in a large roasting tray, drizzle with 2 tbsp of the olive oil, scatter the thyme sprigs over the top and season with sea salt and freshly ground black pepper. Roast the tomatoes in the oven for about 25 minutes.

Meanwhile, heat the remaining olive oil in a large saucepan over a medium-low heat. Add the onion and cook, stirring occasionally for 5-6 minutes or until the onion is soft. Add garlic and stir for another minute.

Add the roasted tomatoes and juices to the pan with the onion. Cook, stirring occasionally, for 20-30 minutes or until it has thickened and reduced.
