Sunday Sweets – Pineapple and Carrot muffins

Bean’s lovely Mum sent us through another gem of a recipe, that apparently quite a few people in Canada grew up with.  I’d never think to combined these two ingredients in muffins, but it really works well.  You can make this recipe vegan by using an egg replacement, this wholesome muffin has a soft cakey texture.

Pineapple and Carrot Muffins

  • 1/3 c granulated sugar
  • 1/3 c loosely packed brown sugar
  • 2/3 c oil (we used Canola you could use sunflower or grapeseed)
  • 2 large beaten eggs
  • 1 1/2 c all purpose or unbleached flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 c crushed pineapple with juice
  • 1 c grated carrots
  • 1/2 c walnuts

Preheat the oven to 180ºC (350ºF) and grease a muffin tin.

Place sugars, oil and eggs in large bowl and beat well.  Add flour, baking powder, baking soda, salt and half the cinnamon, mixing well. Add vanilla, pineapple and grated carrots, again mixing well.  Add half the walnuts.

Spoon into the muffin tins, then mix the rest of the nuts, a tablespoon of sugar and cinnamon in a little bowl then sprinkle on top of each muffin. Bake for 25-30 minutes.  The cooking temp. may vary depending the muffin size, so test them with a skewer (it should come out clean).

During their career, The Free Design never gained the commercial success they, and their small fan-base, felt they deserved.  All members of the Dedrick family, their trademark sound involved complex harmonies, jazz-like chord progressions, and off-beat time signatures, not unlike Peter, Paul and Mary, or the Hi-los.  The Free Design released seven albums from 1967 to 1972, that are much more appreciated now than they were at the time of release.  Partly due to an early 2001 remix album (by the likes of Peanut butter wolf, Stereolab, Madlib, Dangermouse and Caribou) called “the now sound redesigned” that gave the talented band a second chance to be heard.

  2. I never realised that pineapple and carrot is a Canadian thing… but I can definitely vouch for the fact that it’s a wonderful combination. :)
    I sometimes take it over the top by adding a little shredded coconut, but I quite like the chopped walnuts in your version. Yum!

    Shredded coconut would indeed be a great addition… I know in Australia I’d never heard of this combo, but a lot of people here in Canada seem to recognise them!
