A bit of chocolate

Sometimes there is just a need for chocolate. Not often for me, but occasionally there is a need, so today here is our favorite chocolate recipe you might like, or need, to try.

Chocolate Guinness Cake

This is one of Nigella’s cakes, and she is definitely one huge fan of chocolate. It is a rich, damp, black cake that Bean makes to perfection, and with the cream cheese icing it is just to die for.

For the cake

  • 250ml (just over a cup) Guinness
  • 250g (8.8 oz) unsalted butter
  • 75g (2.5 oz) cocoa
  • 400g (14 oz) caster sugar
  • 140ml (2/3 c) sour cream
  • 2 eggs
  • 1 tbsp real vanilla extract
  • 275 g (2 1/2 c) plain flour
  • 2 1/2 tsp bicarb soda

For the icing

  • 300g (10.5 oz) Philadelphia cream cheese
  • 150g (5 oz) icing sugar
  • 125 ml (1/2 c) double or whipping cream

Preheat the oven to 180ºC (350ºF), butter and line a 23cm (9in) springform tin.

Pour the Guinness into a large wide saucepan, add the butter and heat until it has just melted, then whisk in the cocoa and sugar. Beat the sour cream with the eggs and vanilla and then pour into the brown, beery pan and finally whisk in the flour and bi-carb.

Pour the cake batter into the cake tin and bake for 45 min – 1 hour. Leave to cool completely in the tin on a rack as it is quite a moist cake.

For the icing lightly whip the cream cheese until smooth, sieve over the icing sugar and then beat them together, add the cream and beat again, until it forms a spreadable consistency. Placing the cake on a plate, ice the top of the cake so that it resembles the frothy top of the wonderful pint.
