Sunday sweets

For some reason Sundays make us think of sweets. The last day of freedom before the week starts and you want to soak up every second of it just to make sure you didn’t waste anything. You need to treat yourself to some baked goodness. What about an easy recipe that won’t take long, but is thoroughly enjoyable on a Sunday afternoon (or at any point you may need treats- like the following dreaded Monday perhaps)?

Blueberry Muffins

Beans lovely Mum sent through this recipe, it’s fast and delicious and great for afternoon tea.

  • 1 egg
  • 1/2 c milk
  • 1/4 c vegetable oil
  • 1 1/2 c plain flour
  • 1/2 c sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 c blueberries (fresh or frozen)
  • 2 tbsp brown sugar
  • 1 tsp cinnamon

Preheat oven to 200ºC (400ºF) grease a muffin tin.

In a bowl, beat the egg with a fork, stir in the milk and oil and mix well. In another bowl, mix dry ingredients together. Gently stir the dry into the wet and mix until just combined, then add the blueberries. Spoon into tins and sprinkle generously with brown sugar and a little cinnamon on top. Bake for 20 – 25 minutes.

You can always use different berries if you like, especially if you get a fresh bunch in season.
