Sunday sweets – Fresh apple cake

This is a really wonderful recipe for a sweet moist apple cake that is so easy to make, it’s crazy. The outside crisps up just a little and the walnuts add crunch. You can use any kind of apples, but we enjoy a tart cooking apple like Cortland, Granny Smith or Northern Spy.

  • 3 c apples chopped into large chunks
  • 1/2 c chopped walnuts (optional)
  • 2 c flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 c sugar
  • 2 eggs, beaten
  • 1/2 c butter, melted
  • 1 tsp vanilla
  • demerara sugar for sprinkling (optional)

Preheat oven to 180ºC (350ºF) and grease a round cake tin.

Mix the dry ingredients together. In a separate bowl mix vanilla, eggs and melted butter together. Add the wet to the dry and mix until just combined. Then add the chopped apples and walnuts and mix again, gently. Pour batter into the greased pan and sprinkle with demerara sugar (or regular caster sugar), then bake for 50 minutes – 1 hour.

This recipe is inspired by Moosewoods old-fashioned apple cake, but it’s transformed quite a bit over the years!
