Easy maple-glazed peaches

Strangely, I Peas, don’t actually like chocolate much. Outrageous I know, but I still love sweet treats and sometimes I want one that’s really quick and not too terribly fatty. That’s when fruity desserts are key. This is a nice recipe because you can use fresh peaches or tinned. Now that eatpress is located in the land of the maple leaf, using maple syrup feels patriotic, but really any excuse is a good excuse for maple glazing.

(You can use honey if maple syrup is hard to find near you or too pricey.)

  • 6 peaches
  • 3 tablespoons maple syrup
  • 2 tablespoons orange juice
  • 1/2 tablespoon Grand Marnier liqueur (optional)
  • Generous pinch of nutmeg or cardamom
  • Mint sprigs for garnish

Preheat grill, barbecue or frying pan.

If you want you peached skin free fill a large pot with water and bring to a boil. Carve an X on bottom of each peach. Immerse peaches in boiling water for 30 seconds. Remove and immediately plunge into ice water. When cooled, gently pull off skin with a knife. Slice each peach in half and discard pits.

Combine maple syrup, orange juice, Grand Marnier and nutmeg or cardamom. Brush cut side of peaches with the mixture. When grill or pan is ready, place peaches cut side down. Brush the tops with maple glaze. After 5 minutes, turn peaches. Cook another 5 minutes until lightly browned and caramelized.

Serve with a scoop of vanilla ice-cream, yoghurt or try with a nice goat cheese. Garnish with fresh mint.
