Perfect peanut butter cookies

While we visited family in Southern Ontario last weekend we were lucky enough to pick up a few more tried and true family recipes from Beans’ Mum.  We are so lucky to get these recipes, they’re gems that are known beauties.  I mean nothing proves a recipe more than a whole family loving it for years right?  And you can’t go wrong with peanut butter cookies (well you can – sorry those with allergies).  These cookies are such good comfort treats, you’ll be wishing for a rainy day, so you can make them and eat them with tea, a good book and a comfy couch!

makes 3 dozen

  • 1/2 c butter or margarine
  • 1/2 c peanut butter
  • 1/2 c sugar (1/4 for the recipe, 1/4 for rolling)
  • 1/2 c brown sugar
  • 1 large egg
  • 1/2 tsp vanilla
  • 1 1/4 c sifted flour
  • 3/4 tsp baking soda
  • 1/4 tsp salt

Preheat the oven to 190ºC (375ºF) and grease 2 cookie sheets or baking trays.

Thoroughly cream the butter, peanut butter and sugars together.  Add the vanilla and egg and mix again.  Sift together the dry ingredients and then slowly add them to the butter mixture.

Shape into 1 inch balls and roll them in granulated sugar before placing onto baking trays.  Press 5 peanuts ontop each cookie or crisscross with the tines of a fork to flatten a little.  Bake for 10 – 20 minutes (10 for chewy, 20 for crunchy).  Let cool slightly before removing from the pan.
