Sesame cookies

These cookies are lovely, the recipe is from the great Mollie Katzen and she makes them as sesame stars. So cut them out in any shape you like and enjoy.

  • 1 c butter, softened
  • 1 c sesame butter or tahihi
  • 1 c (packed) brown sugar
  • 1/4 c granulated sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 4 c unbleached white flour
  • 1 tsp baking powder
  • 1/2 tsp salt

Preheat the oven to 190ºC (375ºF). Lightly sprinkle a baking tray with sesame seeds.

Cream together the butter, sesame butter or tahini and sugars in a bowl. Add the eggs one at a time and then the vanilla.

Sift the flour baking powder and salt directly into the butter mixture and stir until thoroughly combined. Turn out the dough onto a lightly floured surface and roll out pretty thin, about 1/2 cm (1/8in). Cut into 6cm (2 1/2in) shapes with a knife or cookie cutter and place on the prepared tray. Sprinkle the tops with sesame seeds and and sugar and bake for 12 – 15 minuted or until lightly browned. Cool on a rack for about 10 minutes before serving- if you can wait.

Please note: This makes a whole lot of cookies, so you can either use half the dough and freeze the rest, or just half the recipe, makes about 40.
